The material of a scale platform affects cleaning, durability and how it looks on a worktop. It affects accuracy not at all, which is worth stating since marketing sometimes implies otherwise.
Tempered Glass
Common on flat platform scales, and the most attractive of the three. A single sheet of glass with no seams wipes clean in seconds, which is its main practical advantage.
The drawbacks are weight, coldness underhand, and the obvious one: glass breaks. A dropped glass-topped scale is generally finished, and glass also shows fingerprints and water marks more than any other surface.
It is a good choice for a scale that lives on the worktop and a poor one for a scale stored in a crowded drawer.
Stainless Steel
Durable, hygienic, non-porous and resistant to staining. It handles being knocked about considerably better than glass and does not shatter.
Steel bowls in particular are worth having for wet ingredients, since they are dishwasher safe and do not absorb odours. The disadvantage is fingerprints, and brushed finishes hide them better than polished ones.
Plastic

Plastic platforms with textured surfaces are harder to clean than smooth ones, since residue lodges in the texture. For a scale that will see wet ingredients, this matters.
What Actually Determines Cleanability

- Sealed versus open button membranes, the single biggest factor
- Removable components, which can be washed properly
- Flush platform edges rather than raised lips
Sealed buttons and displays matter more than the platform material. A scale with a sealed membrane tolerates spills; one with open buttons does not, whatever the platform is made of.
None of This Affects Accuracy
The load cell underneath determines accuracy, and it is the same technology across price points and materials. A glass scale is not more accurate than a plastic one.
What material does affect is longevity and whether the device survives kitchen conditions, which is a real consideration but a different one.
Choosing
For a scale that lives out on a worktop, glass or steel looks better and cleans easily. For one stored in a drawer among other equipment, plastic or steel survives better.
For anyone weighing wet or sticky ingredients regularly, a removable steel bowl is the most practical arrangement available, since the part that gets dirty is the part that can be properly washed.
